Salsa Verde Potatoes – A Flavourful and Easy Side Dish
These Salsa Verde Potatoes are a simple but tasty way to serve potatoes a little differently. They’re pan-fried until golden, then gently steamed with garlic, onion, and parsley for extra flavour. They work well with a variety of mains — especially my Portuguese Steak with Crispy Prosciutto.

Salsa Verde Potatoes
Ingredients
- 6 small potatoes about 1 kg or 2 lb, cut into wedges or slices
- 4 tbsp olive oil
- ½ medium onion finely chopped
- 1 tsp minced garlic
- 3 tbsp finely chopped parsley
- 1 tsp salt
- ½ tsp black pepper
- 1 cup boiling water 250ml
Instructions
Fry the Potatoes
- Heat olive oil in a large heavy-based pan until it begins to shimmer. Add the cut potatoes and cook for 10–15 minutes, turning often, until lightly golden with good colour.
Add Seasoning
- Sprinkle the chopped onion, minced garlic, parsley, salt, and pepper evenly over the potatoes.
Add Water and Simmer
- Pour in 1 cup of boiling water. Don’t stir — just gently shake the pan back and forth to distribute the water.
Cover and Cook
- Cover the pan with a tight-fitting lid. Reduce heat to low and simmer for 20 minutes, occasionally shaking the pan. The potatoes should be fork-tender and full of flavour.
Serve
- Serve hot, either as a side dish or alongside a main like Portuguese Steak.

Notes
- These potatoes go especially well with Portuguese Steak
- Don’t stir after adding the water — shaking preserves the potato texture.
- You can cut the potatoes into thick slices or wedges depending on preference.
