Ingredients

The Patties

  • 1 kg chicken mince
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup chopped fresh parsley
  • 1 cup fresh breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 teaspoons chicken stock powder
  • 2 eggs
  • 1 teaspoon black pepper

The Filling

  • 1 cube of cheddar cheese, approximately 2–3 cm, for each rissole

Instructions

  • Combine all pattie ingredients and mix well with your hands for a couple of minutes. You can fry a tiny little piece at this stage to check for seasoning.
  • Form the mixture into patties, place a cube of cheddar cheese (or any cheese you prefer) in the centre of each one, then shape the mixture around the cheese to completely enclose it.
  • Fry over a medium low heat for 10-12 minutes (5-6 minutes per side).
  • Cut the biggest one open to make sure it is cooked through. Chicken mince should be cooked right through with no pink remaining.
