Cook Time: 15 minutes minutes
Servings: 10 rissoles
These cheesy chicken rissoles are juicy, full of flavour, and quick to make. With a delicious surprise of melted cheese inside, they’re perfect for busy nights, weekend lunches, or casual family dinners. Serve them with a simple salad, veggies, or tuck them into a burger for a fun twist.
The Patties
- 1 kg chicken mince
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1/2 cup chopped fresh parsley
- 1 cup fresh breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 teaspoons chicken stock powder
- 2 eggs
- 1 teaspoon black pepper
The Filling
- 1 cube of cheddar cheese, approximately 2–3 cm, for each rissole
Combine all pattie ingredients and mix well with your hands for a couple of minutes. You can fry a tiny little piece at this stage to check for seasoning.
Form the mixture into patties, place a cube of cheddar cheese (or any cheese you prefer) in the centre of each one, then shape the mixture around the cheese to completely enclose it.
Fry over a medium low heat for 10-12 minutes (5-6 minutes per side).
Cut the biggest one open to make sure it is cooked through. Chicken mince should be cooked right through with no pink remaining.
- Cheese Options: Tasty cheese works beautifully, but feel free to use mozzarella, cheddar, or whatever cheese you enjoy.
- Size Variations: These rissoles can be made any size you like — bite-sized for appetizers or larger for burgers.
- Serving Ideas: Serve with salad, steamed veggies, or in a burger with tomato relish and mayo.
- Make Ahead: Rissoles can be prepped earlier in the day and stored covered in the fridge until ready to cook.
