These soft scrambled eggs are made using a simple technique that creates big, fluffy curds with a tender, creamy texture. With cold eggs, cold pan, and low heat, you’ll get perfectly cooked scrambled eggs every time—no vigorous stirring required!

Ingredients

  • 6 large eggs
  • ½-1 teaspoon salt or more or less to taste
  • 2-4 tablespoons cream the more cream the fluffier the eggs
  • 1 knob cold butter
  • Cracked black pepper to serve
  • Toast for serving (optional)

Instructions

  • Crack eggs into a bowl.
  • Add salt and cream. Whisk with a fork until combined.
  • Do not add pepper yet—it’s best after cooking otherwise could turn the eggs a grey colour.
  • Place a knob of cold butter in a cold pan.
  • Pour the egg mixture into the pan.
  • Set the stove to low heat.
  • Let the eggs begin to slowly set without stirring.
  • Once they just begin to set, gently push the eggs with a spatula to form ribbons.
  • Repeat: let set slightly, then gently push to form large curds.
  • As the mixture heats up, curds will form faster—keep gently pushing, not stirring.
  • Remove from heat just before eggs are fully cooked.
  • Serve with cracked pepper and toast, if desired.
