- 1 cup peas
- 3 tbsp cream
- Olive oil for cooking
- Salt & cracked black pepper to taste
- Optional: 1 peeled & grated apple adds a touch of sweetness
Instructions
- 1️⃣ Par Cook Sausages: Bring a pot of water to a boil, add sausages, and simmer for 5 minutes to remove excess fat. Let them cool slightly, then slice diagonally. If they have casings, remove them before slicing.

- 3️⃣ Add Curry Powder & Thickener: Stir in the curry powder and let it cook for 1 minute to release its flavors. Add the cornstarch (or flour) and stir for another 2 minutes over low heat.
- 4️⃣ Make the Sauce: Gradually pour in the chicken stock (or water with stock powder), stirring constantly to avoid lumps.
- 5️⃣ Simmer & Cook: Add the sliced sausages and, if using, the grated apple. Let the mixture simmer uncovered for 10-15 minutes, allowing the flavours to meld.
- 6️⃣ Final Touches: Stir in the peas and cream. Season with salt and black pepper to taste.
- 7️⃣ Serve: Ladle the curried sausages into bowls and serve with fluffy white rice. For extra flavor and presentation, sprinkle a dash of curry powder on top.
