German Layer Salad
Prep Time: 30 minutes mins
Servings: 8 servings
This colourful, creamy German Layer Salad comes from my lovely mother-in-law in Germany. It’s perfect for picnics, gatherings or family dinners — and even better made the day before. Everyone at work loved it, and my husband (who’s German) gave it the thumbs up too!
- 6 hard-boiled eggs chopped
- 2 sticks of celery finely chopped
- 2 leeks sliced thinly and well-rinsed
- 2 apples peeled and diced (tossed with lemon juice)
- 150 g chopped ham
- 1 small tin of corn kernels about 200g, drained
- 1 tin of crushed pineapple 450g, drained
- 300 ml sour cream
- 200 ml mayonnaise
Start by boiling 6 eggs. After they’ve cooled, chop them into small pieces.
In a large bowl, layer the finely chopped celery at the bottom.
Add the chopped eggs, followed by the diced ham.
Next, add the drained corn kernels, then layer the drained pineapple over the top.
Sprinkle the diced apples over the pineapple.
Whisk together the sour cream and mayonnaise until smooth and spread the dressing evenly over the top.
Finally, layer the thinly sliced leeks as the crowning touch.
Cover and refrigerate overnight for the best flavour.
When you’re ready to serve, scoop into bowls and enjoy!
- Tastes even better when made the day before.
- Use a clear glass bowl to show off the layers.
- Great served alongside fried bratwurst for a full German meal.
