Oven-Roasted Vegetables with Halloumi – A Favourite at My Table

Prep Time: 20 minutes
Cook Time: 1 hour 15 minutes
Servings: 8 servings (side dish)
This oven-roasted vegetable dish with halloumi has been a favourite at my table for years. It’s simple, colourful, and full of flavour—made with a mix of root vegetables and topped with golden, salty halloumi. I’ve passed this recipe on to so many people over the years because it just works. Whether you serve it as a vegetarian main or a vibrant side, it’s always a hit.

Ingredients

  • 3 medium to large carrots peeled and chopped
  • 500 g sweet potatoes peeled and chopped
  • 500 g potatoes peeled and chopped
  • 3 large capsicums any colour, chopped
  • 2 large red onions cut into wedges
  • 1 tbsp fresh thyme leaves or 1 tsp dried thyme
  • 1 tbsp salt
  • Cracked black pepper to taste
  • ½-1 cup olive oil adjust to preference
  • 250 g halloumi cheese sliced into small pieces (or more if desired)

Instructions

  • Preheat oven to 180°C fan-forced (350°F) or 200°C conventional (390°F).
  • Peel and chop all vegetables into chunky pieces. Combine in a large bowl.
  • Strip thyme leaves from stems and add to the bowl.
  • Season with salt and cracked black pepper. Add olive oil and toss well to coat.
  • Transfer to an oven-safe pot or deep baking dish with a lid.
  • Bake covered for 1 hour, stirring halfway through, or until vegetables are tender.
  • Slice halloumi into small cubes while the vegetables cook.
  • After 1 hour, remove lid and sprinkle halloumi on top.
  • Return to the oven uncovered for 15 minutes, or until halloumi is golden.
  • Serve warm as a main or hearty side dish.

Notes

  • Chunky cuts give the dish a rustic texture and help the vegetables roast without becoming mushy.
  • You can increase or reduce the amount of olive oil, but it adds lovely richness and helps with caramelisation.
  • Any colour of capsicum works, but a mix adds great visual appeal.
  • For best results, use a pot or dish with a tight-fitting lid to keep the moisture in.
  • Halloumi adds a delicious salty finish—add more if you love it!
  • This recipe works beautifully as a main course or a colourful vegetarian side.
